I seem to be having a problem with my homemade SD. Here are some pics of it to start off with.

I bought the quart paint can from lowes brand new empty and did a burn off on it to get rid of the liner material. All the pipe is 3/8. I initially built this for my smoker box i built for smoking my summer sausage and decided to adapt this to my traeger. I noticed when i did cold smoked 2 runs of cheese it had a bitter taste to it. I just mounted it to my traeger last night and did a dry run on it today without the traeger running and now my traeger has that same bitter smell to it now that the cheese had. I'm new to the whole smoke generator thing and also newer to the traeger, i used a stick burner for the last 8 years and decided to go a different route so i went with a traeger. I am adapting this because the traeger doesn't seem to do a real good job of smoking over 200 degrees and want to be able to smoke reguardless of what temp i want to run at
