Thank you Todd. I have some cut up loin I am going to try again, this time no cooking. Sort of wondering since I never liked the loin until I started brining, if I'll miss the "dark meat" in the butt.
I still have your care package here. I didn't forget but my wife needs a little time before she sees my stuffer. She would rather me paint her office.

You mean you have not started yet? LOL

Thank you Sir. It was a shame to waste 'em, but now I know anyway. Its how we learn.Very, very nice Foam !! Those sausages look amazing, well done even though they did not turn out as ya would have liked ! I'm savin up to get me a grinder & stuffer to get into the sausage making.... Your makin me hungry for sure ! BTW, that bread pudding.... Damn ! Love bread pudding !
Sounds like you need to post the recipe for your amazing, keeps on giving, coconut rum sauce! Like stone soup, but waaaaay tastier!!
Tank you Clarissa, That's what happened when you take something you like already and try to make it better....... If it ever does work its awesome, but its hard to improve upon what works so good. It's like thinking you can make better bacon or something! <Chuckles>
BTW....... OMG! I had sooooo much sauce and ran out of bread pudding. I added some corn syrup to the sauce, to help against crystallization, cooked it down a softball stage, and threw in some of those jumbo pecans I smoked. I drained the sauce off the individual nuts, and chilled over night. Still a little sticky this morning, I used some granulated sugar on them to they wouldn't stick and made some of the best praline candied pecans Anyone ever tasted.
Sister came over to tell me she was a new grandma again, Pop got one pecan (I had taken the plate away from him earlier), Brother -in -Law a couple, and I guarantee you she ate at least 2 dozen (She would have had more if there had been any) ROFLMAO..... What little sauce was left I poured on to a cookie sheet, allowed to cool, and slammed down on the counter and have been enjoying Coconut rum caramel, like a "Werthers" caramel candy. Its was some pretty versatile stuff!
ROFLMAO the dessert that just keeps on giving.........
Dave, I apologize! I just noticed I not only didn't thank you, but I didn't even acknowledge the post.
