What chili powder do you have access to? The basic chili powder sold in most grocery stores is mild, and usually made from Ancho chilies, with other stuff added. It isn't quite as flavorful as fresh ground Ancho chili, but it works. My wife is not a fan of heat, so Ancho, aka Pasilla, chilies are the ones we use most often in rubs.

I do notice a difference a difference in taste and heat when I use Chipotle chili powder, or New Mexico Hatch chilies, but they are good in their own way.
