Well not really bologna because im not emulsifying (too lazy)

So its Amish Lebanon SS

Fresh 90/10 from local butcher.

Get with this tomorrow.

Yum! The commercial stuff I'm used to really isn't emulsified . . . semi emulsified?
I've always thought of it as more of a SS than bologna anyway.

Way back we did the tour at their plant in Palmyra PA. Interesting on how they smoked with wood dust and steam. The huge 6' long chubs hanging in the smokehouses.

If your wondering what mix this is, Its PS Seasoning #769 with 3/4 cup sifted brown sugar, cure #1
ECA will be mixed in Monday morning before stuffing/smoking.
