Recent move to Hilo, HI and itching to get back into smoking anything I can get my hands on!
Longtime user of Little/Big Chief's and Masterbuilt barrel. Wanting to build something much better and undecided at this point the direction to take.

akcamo, welcome to SMF!  Glad you are here and ready to smoke on the Big Island.  Since there is a Home Depot in Hilo, supplies would be easy for anything they have in stock.  I'm a Weber Smokey Mountain guy and they'd have everything you need to keep it smoking for decades.  Whatever you choose, have fun!

Lots of roadside smoked pig and ahi! Haven't connected with any local gurus yet.

Lots of ono plate lunch grilled chicken, fish, kahlua pig. Still prefer the bone in butts I would salt rub and wrap in ti and banana leafs and slow smoke in my crappy master built.
Going to look at building a brick smoker/grill or standing box smoker of some type. Lots to consider first.

Lived in Waimea, there was a good BBQ joint there, but it's gone. There's a guy that moves around with a mega chicken cooker. Ask around he spends most of his time near Kailua Kona. Some of the best tamales I've ever had were at a stand at the farmers market a bit south of Hilo (not the one in town).

Try and find a chef that goes by Woody. He used to hang here. Lives outside of Kona and worked down in the Resorts West of Waikoloa. His wife's family is Greenwell. If you google Grenwell Museum you can check that out. Go early if you want to buy rolls!

Kiawe wood is great for smoking, and it grows like a weed there.

The Phillipino's around Kawaihae like to roast wild goats.
