Second weekend hitting it hard, trying to remember how to do this again. Next weekend is the big neighborhood contest with 13 teams. So…we did two pork butts, two racks of St Louis ribs, and two tri tips for meat, also massive tray of Wicked Beans and smoked twice baked potatoes. Used two Webber kettles and two Pellet poopers through the process. Messed the ribs up, they were edible though, but the rest of it came out good enough to make our street happy. It’s a good Labor Day when you remember how to smoke meat and make the neighbors and family fat and happy!
