Here are some of the many low fat options.
Smoked Turkey Breast, very lean
Chicken breasts
Whole chickens and freeze the legs and thighs which have more fat for another day.
Smoked ground turkey meatloaf. ground turkey, egg white, ketchup, seasoning, yumm. you can put some jarred roasted red peppers on the top and as it smoked the moisture will render out of the peppers and baste the meatloaf.
Use the above mixture mixed with some rice in a yellow red or orange bell pepper.
Portabella mushrooms, mopped with balsamic vinegar.
Fish. I like salmon but you could use a lower fat fish if you like. I marinate mine in a mustard maple syrup vinegar marinade.
Sweet potatoes. Cut them up, toss them in a bowl with a tiny amount of oil and put them on a vegetable pan. Top with some fresh herbs.
Use your imagination and you will come up with plenty more.
