Again I will say Thank You, From almost 2 years to now. Wagyu it is .

To start , many know the story of how I received this VERY generious gift from a few folks here at SMF.
I will not get into all the details as I had a very hard time to except it . But understood the reason, just hard for me.

So first I will say thank you ( I know I did when this was given to me ) but I must say it again, Thank You.

I have just been very busy and did not want it to just sit in the freezer on the chance I could or could not get to it.
So now that the building is weather tight , the beef will mostly be done during the winter , looking forward to this.

So I ordered the load last night and picked it up today, this is what I ordered ( would have been more last year but the prices went way up BEEF , but still very happy .

8 - 12 oz USDS Prime Sirlion Steaks
3 - 2.4 kg ( 5 lbs ) Wagyu Beef Back Ribs.... these will be first to get the treatment, lol
1 - 2.72 kg USDS Prime Rib Roast ( 3 bone )
1 - 1.3 kg Wagyu Tri-Tip ( peeled )
1 - 2 kg Wagyu Top Sirloin Cap ( coulotte )

They sell both Brant Lake and japanese Wagyu, I went with the Brant Lake.

Here is the load of beef. Everything is cut and fast froze so not much to see.

Looks like you'll have some fantastic dinners over the Winter!

The only wagyu I've had is ground and all I can say is that the burgers made with it were the best I've ever made.

I also have never had any wagyu, and if it was not for this I probably never would have.
But I really look forward to nany nice and tasty smokes .

Yes Wagyu is new to me , just what I have seen done here on the site SMF by others. So really looking forward to that.

Ha Ha , I hope I don't mess up a couple of those cuts , as the TriTip is new to me and maybe the Coulotte. I will look up other members cooks on these cuts and see what I want to do with them.
