I took the leap yesterday giving Arizona BBQ Outfitters a deposit to start the build on a new Tombstone Pit mounted on a trailer. It is a 7 rack vertical smoker with the Scottsdale Santa Maria grill mounted on front. It will be very similar to the one in this pic with the exception of a few mods and tweaks I requested. The folks at AZ BBQ are great to work with. Can't wait until I get this one home and build a couple fires in it. Going to be a great addition to my current trailer rig. The Santa Maria is going to give me so many more options to offer customers other than just the standard smoked fare. Plus the vertical will allow me to smoke enough ribs in one cook for those larger rib cooks.
