Awsomeness! It's a great feeling the first time you see blue smoke rolling out of the stack! You did good by building smaller and cooler fires the first time or 2...heat curing your paint was important. And I'm with the other guys - wouldn't worry much about some temp variation from bottom rack to top rack. Once you learn where those variations are you'll use them accordingly on your cooks.

Thanks kinda what I was thinking. I am trying to get it figured out this evening a little bit I will probably do another fire in it tomorrow. Then cook on it Saturday.

So I built a fire in it as suggested. With 7 pieces of wood in it. Got the coals going. Got it to about 400 a little higher than expected but I went in for dinner. Got the top air inlet closed. Sprayed with water as also suggested. Got it to 255 on top grate and 252 on bottom then added a split. This was a 10 mins after putting it in. Gonna monitor this one split and time it see temp swing and how long it lasts before adding more ect…. It’s starting to sprinkle hope I don’t get rained out and I can’t stay up crazy late. My daughter needs to ba an hour away for knee surgery at 545am est tomorrow.

That piece of wood lasted 35 mins. I did have to bump open the top air intake about 2” and then closed it a little after it got burning. Temp maxed at 277 top and 254 bottom and held for most of that time temps started dropping to 250 and split was about gone so added one more. See how that goes and I gotta call it a night.

Ok folks trying it out for the first smoke. Got a good menu I think let’s hope the food is good. Stay tuned lol. First up the butt. Trying something new also brined it over night. Then a homemade rub. Sure smells good on smoker if nothing else.

Been going for 3.5hrs now been running pretty stable like this. Top grate is hotter but where it’s at and how stable it it I am good with it.

I am sad to report. I got no finished product pics. Sorry guys. Between getting food together to serve and tending my daughter with her surgery it’s was crazy busy. On a few good notes. She did join us outside for a bit. The smoker ran good all day and the food was awesome. Did have a moment I let the fire get really low. While I was preparing the mac and tending my daughter with meds, ice, and bathroom trip. lol I got it recovered and on to the finish it went. I cooked a 10# pork butt, 6 racks of ribs. 3 normal seasonings and sauce. I also did 3 a different way to test them for a competition I want to go to that’s local. It was actually yesterday. I have to wait till next year to go to it but that gives me more time to tweak and stuff. Also did a new recipe on the butt. My girlfriend said it was my best yet. Oh wait I do have one pic the bologna log I did also. lol Didn’t get to try it cause I was so full from the ribs.

Thanks I think it all went well over all. She’s so so it’s a long recover. 6 months total. 3 months to really walk on it. It was a big surgery. But thanks tho she will get there

The Tractor runs at 225 or so with both intake vents about 1/4 (25%) of the way open...





Try that next time ... Maybe both half way open... Just have to play with it till you get it dialed in...

The smoker is done but it resting place is not well almost lol. Missed a full before pic with the grass.
