Add more water - LEM stuffer

After going thru 3 stuffers (generic names, nylon gear) i ordered a LEM mighty bite. When unpacking couldnt miss the large decal on the cylinder "read before use"...saying....@Dirtsailor , care to guess? add water. When in doubt add more water (not these words). How much water is enough LEM? 90% will do? Call it water sausage?

The decal glue is a b@tch to wash.
 
Hmmmm. I have their 5# stuffer. Don’t recall any warning sticker about water. I don’t like my sausage batter super sticky any way because it’s harder to run through the stuffer and I think it sticks somewhat inside the casing (natural) and contributes to blow outs. I mix just enough ice water to make thing flow well. It’s a feel thing.
Congratulations on the new stuffer, I think you will like it.

Enough icy water (or wine for some Italian recipes) in enough quantity for the right texture. I like to spray the empty canister with water, I've also had good luck spraying the handfulls of sausage as they go into the canister.
 
Only mentioned this as i remember dirtsailor going back and forth with lem customer service; their perpetual comeback was "add more water". When i saw the decal i thought it might have been brought on that.

The machine works well...but so did the other 3 i owned until they didn't.

I’ve not even had trouble stuffing snack sticks and the tube I bought for that measures O.D 3/8” and I.D 5/16”. It takes a bit more effort, but that’s understandable.
 
I remember Dirtsailor's jokes about it, too. I have a 5# one from Gander Mountain that I'm sure is a LEM with a Gander Mountain sticker, nylon gears and all.
No water sticker. Like SmokinEdge, I use just enough water to make it "feel" right and haven't had any problems, even with a 1/2" tube. Just don't get in a hurry.
I've had it for 5 years or so but then again I don't run hundreds of pounds of sausage....
 
My motorized LEM 30# stuffer has 2 tons of force...I have not had any problems with it yet-even stuffing salami with no added water. Even stuffs snack sticks thru a 10mm tube....but it does have the sticker you mentioned.....

I didnt really ask. The question was rhetorical. My post was only meant to be an arch in time linking to a long runnning joke started after dirtsailor had issues with his lem stuffer.
