AC LEGG 116/Beer/Jap Stix

Got 3 lbs of 80/20 needs to be made into some stix.

Going with AC 116, Beer and some jap powder. Sorry dang flash was off again.

All mixed. Gotta put in fridge cuz heading to Hilton Head today.

STICK PROBLEM

So i go in the fridge to get the mix and its not there. Hmmm in garage. Not there either?

I call my wife at work and ask where the green bowl is with the meat? She said oh i opened it and it smelled weird so i tossed it.

Yeah DUH Cuz its beer mix.

I avoid using the fridge in the house for just that reason.

Ok trying this again after the minor setback.

Forgot the jalapeno jar but i did add it to the mix.

All mixed but have to garage fridge for a couple hours before i stuff, worked it just a tad to much to get my color.

Re mixed before stuffing this morning. 19mm casings this time.

Here are the stix after 2 days in my experiment mode.

Real happy on how they got darker.

Shrinkage guessing was about 30%

The process really brought out the tang of the ECA. My wife said really good like store bought slim jims except without all the greasy oozing fat.
