Like many of you, I have tossed around the idea of selling my BBQ. Finally I found the courage to order a custom concession trailer with a 6 foot porch which would hold my Cadillac Cooker rotisserie smoker. All in around 30k. For months I made a push on Facebook but had no clue if anyone would come out on my first day. Things did not go very smoothly the night before. I loaded 300lbs of meat in the smoker during a very wild lightning storm and when I went to check on the smoker at midnight, I found that the rotisserie chain had broken and all of the meat had fallen off of the shelves and into the bottom of the smoker. We some how got everything back onto the shelves but I had to cook with the meat not turning. That is not very good for consistency. Opening day we were running 15 minutes behind our 12 o'clock start time. When I looked out the window at 12:15 the line was 75 people deep. The line kept up for a couple of hours and we sold out by 3:30! Not a bad first day, I'll let you know how our second day goes after this weekend.
