Like many of you, I have tossed around the idea of selling my BBQ.  Finally I found the courage to order a custom  concession trailer with a 6 foot porch which would hold my Cadillac Cooker rotisserie smoker.  All in around 30k.  For months I made a push on Facebook but had no clue if anyone would come out on my first day.  Things did not go very smoothly the night before.  I loaded 300lbs of meat in the smoker during a very wild lightning storm and when I went to check on the smoker at midnight, I found that the rotisserie chain had broken and all of the meat had fallen off of the shelves and into the bottom of the smoker.  We some how got everything back onto the shelves but I had to cook with the meat not turning.  That is not very good for consistency.  Opening day we were running 15 minutes behind our 12 o'clock start time.  When I looked out the window at 12:15 the line was 75 people deep.  The line kept up for a couple of hours and we sold out by 3:30!  Not a bad first day, I'll let you know how our second day goes after this weekend.

Pretty darn good results considering

.  Bummer on the chain, do you know how it broke?

You will be successful....   You have a great following....   Don't skimp on quality, but you knew that...

Not only did the chain break, the motor was torn from the smoker.  Reading between the lines, it sounds like there is a glitch with the motor in some way.

No skimping on quality here Dave.  Luckily I have a great meat supplier down the street too!

Congratulations Mark...that's awesome!  I hope those lines form every time you open the doors.

Good luck for continued success!

Wow any vendor would love to have that line of people! What type of food are you offering? I considered doing what you are doing but in Minnesota it's a real pain to get the state to certify you. I instead went to catering private party's and events. Works out well. I always know in advance what I'm getting into. Takes a lot of the guess work out of it.

Hope continued success for you!

Thanks. Brisket and Pulled Pork.  I was going to do sliced turkey, but I could not get it in time.  I think I will skip the turkey because it is more time critical and go with turkey sausage instead.  Trust me, it is no picnic getting certified in Maryland either.  Maybe that is a good thing, I might have had competition on every corner.
