I am looking to make some homemade bacon in the near future. I have two pork bellies that are frozen. I know using fresh is best, but, for reasons I don't need to get into on here, they have been in the freezer since last August. They are vacuum sealed.

My question is do I bother with these anymore or should I cut my loses and start with new meat?

Any thoughts would be appreciated

Unless you are fortunate enough to cut the belly off the hog yourself, most all pork you buy is previously frozen. This goes for all unfrozen pork pieces at the local grocery. It’s been thawed prior to stocking.

So absolutely make that belly into bacon. What’s your recipe?
 
Not sure yet. I am thinking getting maple syrup and black pepper involved somehow. As for the process I need to figure out what fridge I am using and what will fit to cure in.

I won't be getting into this until bear season in WI is over, so I have time to plan!
 
Yep, no issues at all. Go for it and please show us that you come up with. I'd love to see it.

NO! Absolutely do not use that old frozen stuff! Please send to me for proper disposal. :emoji_laughing:

If your first foray into curing and bacon search for Pop's Brine.
Lol, I may have to risk it. I will look into Pop's Brine, thanks.

I’ve had bellies in the freezer for as long as 2 years, and they turned out just fine.
