Been keeping grinder, stuffer & smoker busy the last 3 days with 1 more smoke for tomorrow.

Now to clean up detail.
UGH!! That's the worst part. Now I don't run the volume you did but I clean up as I go. Can't stand to get to the end and be staring at 3 hours of clean up. you probably don't have that option though.

Glad you liked the Cajun sausage. We love that stuff around here. One of our favorites by far.

peachy this was my Dad’s grinder from back in the 80’s. He had a concrete pouring business with no work in the winter so he raised hogs to slaughter in the off months. I believe it has ground tons of sausage. The motor got weak in it & it ran to fast for my liking. Thought I’d redo right. It’s just a cheap Chop-Rite but with good blades & plates it does a great job. Has variable speed plus that box converts 110 volts to run the 3 phase motor.

That is an awesome set up. You can’t buy them like that. I have been collecting a few things to try to put together something similar with an old Enterprise. Wow variable speed and phase converter nice.

I was going to ask if you lived on a farm that had 3 phase power until I saw the single to 3 phase VFD. Nice rig.

Recycling at it's finest.I always check the steel bin at work, you never know what treasures are in there.
