A extremely rare Brisket attempt for me.

I started out with a 14 lb prime brisket from Sam's Club.
The meat guy brought me out six to choose from the one I picked was super loose compared to the others. I trimmed off 3lbs mainly the hard fat, and the funky looking edges. I filled the hopper with Lumberjack oak pellets fired it up to 275*. Placed the trim in a S.S colander over a aluminum drip pan, to catch the good stuff.

Seasoned up the meat with Heath Riles Beef rub, a little sea salt, and some chunky blk pepper. The meat didn't go on until 4:00 PM, 7 hrs later it hit 190* in the thickest part, the point I guess??? LOL!!!

I sprayed pink paper with a little beef broth and Worcestershire, then ladled about 3/4 cup of the liquid gold and smeared it all over the pink paper. Turned the heat down to 235* to try to prolong the cook. Once it probes real nice I'll wrap it in the old wool blanket, then into the pre warmed cooler for the longish hold. I'll leave a probe in it to make sure it doesn't get below 155* I don't need it until Monday afternoon, so it will be a good long hold. I've done it before with pork butts and it held temp for 12+ hours, in the preheated Yeti. Worse case, if it starts dropping temp, I'll transfer it to the oven at 160-165* for the remainder of the hold.

Fingers crossed I don't totally mess this up. LOL!!!

Heading to the hold now, so I can try to sleep a bit.
I set a low temp alarm too 158*, to let me know when I have to transfer the brisket to the over for my extended hold.


Crazy enough these are pretty much my typical hours, living the life of an insomniac, sucks... time to try to catch a few ZZZZZZ's!!!


Oh, Chris, I riced eggs last night for egg salad, I'll never go back to the chop/smash method. the ricer rocks for egg salad, you were right.
I did chop 4 eegs to get it a little texture, this ricer deal is gonna be a game changer for deviled eggs!!!

I pulled it off at 209*, then placed it in a preheated cooler still wrapped in the pink paper, then an alum pan. Then I wrapped it in the old WW2 wool meat blankie with a term in the thickest part to keep an eye on it while I caught a few ZZZZ's. About 2 hours into my snooze my 165* low temp alarm woke me, which told me it needed to go into the oven to keep it at safe temps which I guess is around 155*, hell I don't know, I used to, but I'm getting old. LOL!!!

Is it cool to hold on the oven until 2:00 to 4:00 PM today.
My oven runs at 160* on warm, the meat is still wrapped in pink paper, then I placed it into a foil pan on a rack with beef broth, and rapped the foil pan tight with alum foil.

I'm going on how I hold any other BBQ that I make, am I good? or did I screw the pooch on this one?

One other question, I forgot to put the tallow into a jar then refer before I went to bed. If I reheat it to 225* for an hour, is it still ok to save it for future use in the refer? or did I screw that up?


Thanks, I'm gonna try to sleep a few more hours, I'm beat, I haven't pulled an over nighter in quite some time, and it's not as easy as it was just a few years ago.
 
My guess is the tallow is totally fine. Not sure about the long hold just because I have never done it. Kinda doubt its a problem, but hopefully another member can chime in on that
 
So far sounds like it's gonna be great, if it's wrapped and sealed well then I doubt there will be an issue with the extra 2 hours in the oven but it does run the risk at 160 of additional cooking and it drying out some.

The USDA guidelines for holding meat is at or above 140°f.

Can't wait for the reveal!

I can relate with the insomnia thing. Me and sleep just don’t get along, so I take what I can get when I can get it. I worked in retail for a long time so I kinda blame the unpredictable schedule for some of my trouble, but with my current job I’m up at 3:30 to be at work by 5. Power naps help.
