Awesome write up and beautiful looking meat. I've only had one personal encounter with aged beef (over 30 years ago) and we didn't go near this long. I bet it was good!

To answer Gary's question, I think so. I only wish there had been more of it after the finish. Between friends and family, it went pretty quick. Next time I'll have to find a bronto brisket.

This is something that I have yet to try. I think I will start with a rib roast and see what happens.
