I'm at 51 days in the UMAi salumi bags.

Time to take em out and look.

So far pretty firm. Normal UMAi feel.
Smells pretty good.

I'm going to vac bag 3 of em. Really no need for any EQ.

The other 3 i'm going to net. I'm glad i saved all my salumi tools from years ago.

The 3 vac bag chubs are going in the fridge.
The 3 netted are going to hang at room temp for while (experiment time)

I been looking for some sort of cheap beverage cooler
(like i had before) Not too many here, dont want to go the supply store route.
 
Maybe I'm missing the point, but what exactly is your experiment about? Have you hit the desired weight loss yet?
