4th of july smoked chicken thighs and legs

    unfortunately I work in the pharmaceutical maintenance industry and July and Christmas are shut down weeks so I have to work every day during the holidays. Was able to slip out a little early on the 4Th and got to smoking some thighs and legs.......

    I ziplock them with some John henrys pecan rub for 2 days then smoke 'm at 225 for 3.5 hrs then add another lit chimney and bump it up to 300 and move them close to the fire box to crisp up...... I run kingsford charcaol in my reverse flow offset braunfel smoker with hickory wood chunks.......
