So I decided to cook for the in laws and the family for fourth of july. few racks of ribs and a brisket flat. Everything was going well temp was right, smoke was right, just didnt judge the time right, temp gauge in the meat lead me wrong, wasnt done yet, so not pull apart brisket, and ribs werent pull bone out tender. everyone said was still good but just not where I wanted it. I didnt follow my normal routine. now I know better fr next time. ugh.
