I used only kosher salt and black pepper. Seasoned and let it warm while I made a. Makeshift smoke generator. My AMNPS from Todd should be here by the weekend. My maverick 732 should be delivered tomorrow. For now I took a ravioli can and made holes in the bottom. Filled 3/4 full with mesquite chips. Then put 4 hot coals on top, turned upside down in firebox and shut the lid. With the meat in the smoke chamber. Let it stay till the smoke stopped. Around 45 mins. Took the meat off and started the fire. Smoked at 225 till IT 145. Then tested a little,sliced and ate.
