Put them on at 10 pm last night. Was going to put them on at 3 am this morning but glad I put them on at 10. I’ll be able to do other things tomorrow this way lol. Trimmed about 1/3 of a pound off is all. A butchers area of fat hanging and some of the Mohawk. Salt and pepper for a rub. Smoking with oak wood. Need to fire the chainsaw up soon. Since I cut full lengths of firewood in half for this smoker, maybe I’ll buy out the 395 since I’ve only used I like 2 times

And I thought the 18 pounder I tossed on earlier was big. Can't wait to see how yours turn out. Interesting looking rig.
 
Well here’s how it looks after 10 hours. I don’t spritz anything on my meats while cooking and doing fat side down this time. I’ve noticed the bottom side of the briskets being. Little over cooked in areas in the past so I think fat side down will help. Was cooking low and slow at about 210 through the night. So I’ll toss the meat probe in at 10 am and hopefully it’s around 170. I got a angus choice on top and select on bottom

Well one took right at 20 hours since I was at 225 and lower, I will probably put it in the fridge and slice it cold if u guys can wait for that tomorrow?? Worked on a little welding project that will sit need a couch and have a live edge wood slab on top and hold a meal and did some archery practice today, since I haven’t shot for couple weeks started a little off and worked my way to to hart shooting a 30 yards

I forgot about the USF Chef'store.
Not worth driving to one here in Florida due to the insane traffic, but the one available to me back in MN is an easy trek.
Did you get them fresh or frozen? Decent price obviously?
 
I’ve never seen frozen brisket there. Price was ok. I don’t like that it’s been going up last 9 months or so. About 5.20 a pound. The choice was actually cheaper by about 20 cents a pounds. They have prime briskets at Costco for about 5.99 I think but the few times I’ve looked they had 18 pounders and less. I need big ones since I can only fit 2 at a time
 
I'm not happy with Costco (and I have a business center here in FL) because as the price has gone up so has the fat load. Tri-tip used to be my go to meat, but the fat load is so high it is no longer affordable compared to a brisket.
The Chef'store back home use to be frozen only. I haven't shopped there in probably 8 years. I'll check them out
