Hi there, first time poster but learned how to smoke some phenomenal briskets from this site.
Headed to my local costco and due to the potential shortage on beef coming down the pipe, ppl went crazy and I got the very last whole packer prime brisket. It just so happens to be the biggest monster I have seen.
I've gotten quite good at your 14-18 #ers but this thing looks daunting.

Besides the much longer cook time, is there anything else I should be doing differently? Is it exponentially harder to get something this big cooked perfectly?

I have a Rec Tec 700 and planning on smoking this thing over night, starting around noon.

You are probably looking at a 18 to 20 hour cook. I hope you got a good one with plenty of intramuscular fat.

I went over 20 hours on 1 that was over 20, think I would ramp the temp up at about the 12 hour mark looking back, made it more like a 16 hour cook, that's the good thing about pellet smokers, pick a temp and let it rip lol

Noon, huh? If it was me I'd start at 6 pm. You could always adjust the temp the next morning and finish from noon to early afternoon. If you need it earlier, noon would work.
