Happy new year everyone.
I have been thinking about making a bunch of meatballs lately. They are so multipurpose and can be used for so many meals: smoked, cheesy, pasta, etc.
The wife helped do some garlic processing, cooked the first meatball meal trial run, and of course helped with the cleanup.
It took a good couple of hours all said and done and they did turn out quite delicious.
Very mild, and not too spicy, just right for a plate of pasta.
Size is bigger that a golf ball, but smaller than a baseball. - I did not want to spend all night rolling meatballs, and we like them big.
Ingredients:
8lbs Pork butt
10lbs Ground elk
9 Eggs
½ cup Olive oil
½ cup Worcestershire sauce
1 cup grated parmesan
2 TBS Salt
2 TBS Black Pepper
2 TBS Onion powder
3 TBS Oregano
12 Garlic cloves
Bread crumbs
We froze the extras and will vac pac them. We are ready for a couple of dinners in the new year.
