Well y'all been a long time since I have posted. I've had a lot happen in my life but I am hoping to be back at it again. I am firing up the pellet smoker and getting ready to slap a 20 lb trimmed prime brisket on it. The brisket is from Costco at $5/lb. I'll keep y'all posted as we go!

I'd buy it at that price, too. Up here, they add another $2 lb.

Bump the smoker up after a couple of hours on low to 275º
 
That will make some pretty good beef bacon... I've only done it once, but it was good!

Pellet Grill is set to 260 and I have post oak chunks in the front compartment on the pellet grill. This is being cooked on the MM 36" Pro Series.

That will make some pretty good beef bacon... I've only done it once, but it was good!

I make it a lot for my family. This time I am making a bunch to give as gifts to friends and family. Will have about 50 lbs of beef bacon made up. I'll try to remember to make a post on it.
 
Pulled at 199. Wrapped extra paper and put into the holding bag until IT 160. Then into vacuum bag and into 150 sous vide overnight. If you look closely you can see it sleeping. I'll give y'all slice shots when it gets time to slice and serve.

Looks amazing… and sous vide is a useful tool! Can’t wait for sliced pics!
