Well y'all been a long time since I have posted. I've had a lot happen in my life but I am hoping to be back at it again. I am firing up the pellet smoker and getting ready to slap a 20 lb trimmed prime brisket on it. The brisket is from Costco at $5/lb. I'll keep y'all posted as we go!

I'd buy it at that price, too. Up here, they add another $2 lb.

I bought 4 of them. Cooking the biggest for B-Day dinner tomorrow and the others I will be turning into beef bacon. Before trim this one was 22.5 lbs.
 
Using the INKBIRD wireless meat probes today. This is where it is currently at.
