Cook it till the IT in the thigh is 160. The breast may be dry, but you need the dark meat done. Rest it for an hour after reaching this target temp.  I think you'll be pleased.

Brine (optional)
Butter under skin (optional)
Season/rub skin
325' over water tray
Smoke for first hour or so
Baste with butter once or twice (optional)
Cook till IT of 160' in breast/thigh
