I've been smoking meat for a while now, and I decided to try my hand at a brisket the other day.... With no temperature gauge on my pit I started my fire with natural lump charcoal and used mesquite wood for the smoke. I placed a pan of water in it to keep moisture and only seasoned the brisket with salt and pepper.
Started at 9 pm.... Checked on the fire every couple of hours, pulled the brisket at 830ish am.

For my first brisket, it came out pretty good.
I can't wait to do another!
