I m new here, Work in Charlotte NC, live in SC just found this forum today. I've been cooking on a Kamado Joe and Weber grill for years now. I hope to pick up an OC Brazos in the next few weeks. Looking forward to the wealth of information here. two places I've found the Brazos is Academy sports and Bucees. I have to order from Academy sports so I don't know if I'll get a good one and Bucees is 2hrs away from me and I don't even know for sure if they have them or how much they cost. I may make the drive and hope to find one with good welds and not too warped.

There's an annual Carolinas Smokers Gathering in Concord that has been going on for more than a decade now. It's worth keeping an eye out for the 2026 thread. Unfortunately it has tended to conflict with a large annual Boy Scout event I support so we only made it to one of them.

Thanks, I'll watch for it, is it always the same month I'd want to attend if my schedule permits.
When I get the smoker I'm just trying to figure out what to do with the meat when I smoke it, I can only eat so much Brisket, Pulled pork and Bacon.

Lots of threads here on vacuum sealers etc. We have a Vacmaster chamber sealer and have never regretted the expense. And, if you don't already have one (or two?), get a big freezer, vacuum seal it and freeze it in meal size portions.
