I am smoker poor right now and had the taste for some BBQ while waiting for the Race to start.

I am using the snake method for first time as well. Qing up some St Louis cut ribs. kind of windy here now but the temp is holding firmly at about 260-262. nearing the 2 hour mark

195 at 4hr mark. A little too much rub but happy with tug on bone. I think the Dutch oven with water helped maintain temp and keep things moist
 
Fine looking ribs Flatbroke. I use my kettle for ribs at least as often as I use a dedicated smoker. The "snake" works great in a kettle.
 
Those look wonderful flat, nice pullback on the ribs. I guess your not smoke deprived anymore. You can do allot with the Kettle - very versatile piece of equipment.

Point for sure.

They look very nice. If I hadn't just eaten a bunch of ribs I'd be wanting some ribs. :)
 
Those look great. I'm on the search for a 22.5'' Weber to add to my gear... even more so now after seeing those ribs.
Thanks. I plan on doing some up again in the morning. I cant believe how easy it is to use the kettle with the snake
 
first time I haven't wrapped ribs In foil. was sated.
