All most there. Going to give it another week. Pretty close to my 40%
Today I finally opened the bag up as it was at 800 grams and I was looking for 797 so I said close enough.
Once opened the smell was back and it smelt so good. Had to use a very sharp knife to cut it in half so I could use the hobart meat slicer to shave off some for tasting. To be honest there is a little to much fat for my liking but the taste was great. Nice to have extra space back in the fridge again :)

Took some of the slices and air fried them. Now those were real good
Looks good. I'm about out so time to make some more...
