For years now I've been using stick n coal in my smoker/grill. Been thinking about this for 2 years now and finally caught one on sale. Who can pass-up $250 off list price on a new grill. Two days later I told my better half about it. Now all I need is a new bale of straw and a couple of wool blankets for the dog-house, but it's worth it. Beer can chicken is primed and ready. Still waiting on my wireless thermos.

Three hours later!!!!!

Beer can chicken came out GREAT. A little different then on my ole grill. Two hrs. on the hot side of 300*-P4. Butter sprayed, heavy on Tony's Creole seasoning and of course "Bud" in the can. Great smoke flavor! I'm sold on pellet poopers.

Yep, asking forgiveness is easier than begging permission.

I found I needed a place to let my Bacon rest after smoking. So I bought a little 4.3 Cu Ft fridge for my "outdoor" kitchen. No smoke stinky bacon aging in "her" fridge.
Best part, I have bacon scented beer cans.
That, and the beer is closer to the dog house.
May I suggest you look into saddle blankets? Their warmer...

Same same... I'm trying a different strategy. The gasser died and is at the dump. She wants another "cheap" gasser and I'm refusing to look at one. We have a old Magma Catalina that I'm using for now but it has a bad hot spot and the internal temp drops like a rock with the slightest breeze so food comes out dry or raw. Given the last few pink chicken breasts she's finally coming around and it looks like I might get my REC TEC next month.

Congrats on the smoker. I am sure you will enjoy what it produces immensely! The chicken looks great. Like!

BTW - you mentioned "hot side of 300"...I was surprised to see that you can set your pellet smoker to as high as 500F! Very nice!

Well it's been 4 months now and numerous cooks and only 2 hick-up, condensation and electrical outage, and I couldn't be happier with my Pit Boss

Congrats on the smoker. BTW - you mentioned "hot side of 300"...I was surprised to see that you can set your pellet smoker to as high as 500F! Very nice!

The only time the ole girl has been over 300* was on the 1st. "burn-in." Kind of partial to low-n-slow.
