1hr ribs again

a while back i did a rack of ribs in a hurry. they turned out great. (im not a huge fatty rib fan) so i did it again last night. i chunked and seasoned them up good and tossed them on hot grill. 10-12 min. a side to get the char on. then i set them in a foil boat poured some miller highlife in there and foiled top tight. the rest of the hour it sat over one burner steaming/braising tender. this is my "goto" rib cook now when the wife is eating. wife is not big on smoke or id smoke them an hour first then foil them up. this works great for fast easy evening meal. i served them with carrots seasoned with the garlic pepper, b sugar and butter.

after the time was up i shut off the grill and set them on sheet to rest 10min.
seasonings were chilli powder, garlic pepper seasoning, thyme, rosemary, ginger, seasoned salt, sage, w sugar. rubbed that into a slurry on the ribs before grilling. sorry no pics, we were hungry and the smell was too much to resist. lol

You could always cut the rack in half and cook both ways. 💡

I saw a video of a pitmaster that cooked ribs really hot and fast, then at the last moved them to an open top grill and put a little char on them. They asked about pulling the membrane and he said "it burns off if you know what you are doing".
