The butt was taken out of fridge only 15min before hitting the smoker. The smoker was running 225-235 for the first 4hrs.

I just cranked it to 260....do you think i've got a little more time to play with since it wasn't room temperature when it went in?

i've got 140 now at 4 1/2hrs....as i said it wasn't room temperature when i put it in the smoker....Do you think it is safe or not safe to eat?

I'm leaning on the safe side since it wasn't room temperature when i started...what do you think?

Your good to go . If you don"t probe it then its just the outside of the butt that needs to get to 140 in 4 hours. Thats one reason I don't probe right away. A lot of times I put the probe in after 7 or 8 hours.
