10lbs of pork belly burnt ends!!!!

So my family and I are working at a camp and the kitchen staff was able to get two pork bellies weighing a total of 18lbs. Really nice getting to use a professional kitchen!!!
Our camp staff and their maintenance crew will be splitting this belly so tonight I am smoking about 10lbs of it.
I have cut it into 1 1/2 inch cubes and have put my own rub on it.
I will smoke it for a late night snack after the kids are in their cabins and then our camp staff will come over and chow down.

Supposed to take about 4 1/2 hrs so we’ll see.
I'm gonna put them on the gas grill/smoker a bit later this afternoon.
 
And there will be about 20-25 people eating them so each person will get a few and some probably won’t try. Their loss!!

Pork belly is on!! Gonna check it in about 2 hrs and then put in brown sugar, syrup and butter. Then on grill for anoth 2-2.5 hrs. And then hopefully eat them.
Nice view to the lake that we were swimming in. So nice on this really hot day!

Well out of 10lbs of pork belly there were only 6 cubes of it left.
It was amazing, you should definitely try it if you have ever even thought about it just go ahead and do it.

So the grill I was using wasn’t getting hot enough and the thermometer wasn’t working so after 4hrs on the grill I decided to throw it in the oven and use the broiler. Good thing I did.
Came out perfect. Had to drain all the juice then put pan back into the oven for about 15min then were done.
The picture of the pork belly burnt ends in the pot was the only picture I could get as people were devouring them.
