So the wife had me escort her to Costco yesterday.....really she lured me by saying want to come pick out meat...lol

This pair of chucks caught my eye so they came home for Sunday din din.

Keeping it simple with Kinders rub since it will be for tacos and stew...

And since I slept in this cook will be done at 275.....

IT 165.....time to braise!

The braise will be done with beef stock, red wine, Demi (all brought to a boil first) and a whole sliced onion and a few cloves of garlic.....oh man I’m so hungry I could eat a whole chuck!

LOL! My daughter lives about 1/2 mile from me. She used to say she knew when I was smoking because her dog would sit in the backyard, sniffing with her nose up in the air. That dog always was smart.

That looks awesome Civil! That earlier shot when you start braising, I swear I could smell it. Finished and plated looks great. With that marbling i can only imagine how nice the texture and flavor is. Another winner for sure. Enjoy, looking forward to tomorrow's installment, lol. Stay safe.
