    Last minute turkey question

    It's almost go time, frying an 11 pounder and smoking one same size. MES only goes up to 275, how long should it take?  I'm thinking 4-4.5 hours. Also, should I fill the drip pan or should I keep it dry to keep the skin from geting rubbery. thanks!

    First Brisket

    It's just a little feller my wife surprised me with, 2.88 lbs. Here it is rubbed and ready for some smoke: I gave it some salt pepper, paprika, Cajun seasoning, onion & garlic powder. It went in at 11:00, I'm guessing around 5 hours should do it. Stay tuned!

    First Beer can Chicken

    Okay, with the built in pan the can didn't seem necessary. I brined the chicken 24 hour swith salt, sugar, whole allspice and bay leaves covered with rub, stuffed butter pats under skin. Drip pan has Shock Top beer, vinegar and Cajun seasoning.  Stay tuned for more Q-view!
