    Actually is spicy honey. Just a cup of honey heated up with 2-3 tbsp red pepper flakes. Let sit for 15min or so to infuse. Add 1 tbsp of cider vinegar mix and strain out flakes.

    It was great! Took it to about 205 prove tender. Let it rest about an hour then into a cooler for 2hrs. Sliced well and was tender easy pull apart but felt firm?? Made some pastrami with mustard and also Reuben’s with it.

    Correct full packer, already corned, seasoned and in raw state. My concern was the amount of fat that was pre trimmed off the flat. Should I not stress about that and follow the normal brisket cook method I usually do or something else.

    Thanks for the tip. I do brush them off with the brush I got from rec req. I guess I just need to do a better job. Any tips on keeping these cleaner, the rails in the racks are pretty big and not a lot of room to get between them.
