I'm looking into getting a Weber Q 220 for camping and I'm curious if you can keep a really low flame on this grill. I'm looking to barbeque at lets say 225-260. Is this gonna be possible on the Weber Q 220?

Should these ribs (baby backs) be done yet? I put them on at 10:30 this morning and have been cooking them at say 220 all day long. I'm asking because they have not really pulled away from the bone at all.
This one is for my lovely wife.... She doesn't like the smoky flavor so no smoke involved... I'm hoping to get some flavor from the rub, charcoal or apple juice. Went on at 3:00.

I smoked my first brisket this weekend and it was excellent except for the rub I chose. I went with the "All South Barbeque Rub" and it was screaming hot for us . I am looking for a brown sugary crust making rub that will go with brisk and ribs. Any help is appreciated.
