I bought a new 17” Blackstone Griddle with a hood last month at a benefit auction…I paid more than what I would have elsewhere, but the proceeds went to a daycare center for handicapped children where my wife used to work before we were married, so I felt justified in the extra expense…
Finally...

We had a cold rainy Sunday, so I decided it was the perfect opportunity to try @indaswamp ’s Keto Mushroom Bacon Cheeseburger Soup!

I hadn’t had spam in years, but after @dr rat did his post about spam, it got me to thinking…🤔
I threw a pack of bacon and some spam brushed with Kinder’s on the Traeger @ 300*…
Let it on for about 30 mins, then removed the bacon and cranked it up to 400 to finish the spam.
All done…

On Saturday I bought a LEM sausage stuffer, and now I’m just itching to make some sausage!
I’d like to start with the recipe from Meat Church Jalapeño and Cheddar Sausage .
In this recipe it says to use natural hog casings, but what I’m wondering is, will it work to use collagen casings instead?
Yesterday I decided to try @DRKsmoking ’s Jalapeño Jelly, so I started by dicing up all my peppers…
Put them all in a kettle and boiled it according to the recipe…
Where I went wrong, was using powdered fruit pectin instead of liquid pectin, it did not thicken at all!! I also used less sugar...
It rained most of the day here, but I still managed to get out to the grill in between showers…

Hi everyone!
I have an overload of Japs this year, so I sliced up a bunch and threw them on the smoker.
Had a little extra room so threw on a few slices of pork roll for my lunch tomorrow
Smoked at 175 to 180 for 3 hours.
Pulled it all off.
Had me a little snack.
Slice of pork roll, slice...
My wife made poutine for the first time this evening!
I used to get it at restaurants when I was a kid living in Canada, but this beat that by a long shot!
Quite simple really!
French fries.
Cheese curds.
Small chunks of roast beef.
Beef gravy. (Should be as hot as possible to help melt...
My wife planted 2 jalapeño pepper plants this past spring, and they went crazy!
I have probably two more buckets worth still on the plants, and I’m looking for ideas on making homemade jalapeño seasonings…
I sliced a few in half, and have them in the dehydrator. I’m thinking to grind them once...
Good Evening Ladies and Gentlemen!
I’ve tried several different recipes for pork belly burnt ends, but none of them ever quite turned out to be what I thought they should be, so finally I struck out on my own, and have been doing it this way ever since.
Here’s what I do, and the results…
I...
I just picked this up off of Craigslist for $75. Plugged it in about 10 mins ago and turned it to almost the coldest setting and it’s already down to 33*.
I’m getting very excited about getting into curing and I’ll probably be asking a bunch of dumb questions! 😁
I picked up a whole fresh pork...
Hi everyone!
This past Saturday, I made a stir fry for dinner and decided to share the results even though there isn’t anything being smoked or grilled.
I’ve played around with stir fry for years, and they always turn out a little bit different, but I have to say that this one was probably the...
Hi everyone!
I did this Sunday evening to take out and munch around the campfire…my wife and daughter (and me of course 😉) loved it!
Go to your local grocery store and empty out their cracker section 😂 (I didn’t actually use all these kinds, but you could if you had a big enough board!)
Get...

The peaches I got weren’t in the best shape, but due to a late frost last spring, peaches are a little scarce around here at the moment, so I decided to use them anyway…

Hi Everyone!
A couple years ago, I was down in Maryland, and went to this place called Meding’s Seafood, they had this delicious thing there that they called Smoked Tuna Dip. I took some home, and in short order it was gone!
This dip is not only delicious, it is also quite expensive! I think...
