I was bad yesterday ... used only 1 rack of my CCSV to do 2 slabs of ribs ....
It was still worth it ....
Didn't do the 3-2-1 method .... spritzed with apple every hour after marinading overnight then saucing peridically until 5 hours elapsed.
Fired up the CCSV at about 11 this morning ... 28ºF with sunshine for part of the day.
Did some side ribs, Quail, buffalo/Jalapeño sausage, Yukon Gold (small) taters, and ABT s consisting of Jalapeños, hot Hungarian, and some mini-bells (sweet for the missus).
Had everything done but the ribs...

Last Sunday ... Nov. 11th, I smoked 3 chuck roasts, 2 pork butts, 2 fatty s and Dutch's beans. All the roasts were in the 3 lb. range (on sale) the fatty s were made from a local butcher's garlic sausage mainly because we can't get JD's on this side of the border.
