My wife was in the mood for pizza and I don't think I've ever said no to that! She makes a great poolish dough that cooks up perfectly in our pizza oven.
I also picked up a new (to me) camera yesterday, so gave it a test run during the cook today. Appreciate you putting up with the photos...
Well I did it again and disappeared for months (a year?!) - sorry y'all. Life has been lifeing lately and with two kids, a demanding career, and a couple of other hobbies I went ahead and fell off the map...again.
My son turns 8 next Saturday, hard to believe. He's requested a pool party...
Threw together some quick chicken tacos last night - one of those "kitchen sink" meals to use some up some veggies. They were pretty good. Nowhere near as good as the carnitas tacos I make, but I think a lot of that is down to the texture of the carnitas giving it a bit of a crunch, and the...
Took a few weeks off in July and spent some time at my parents' cabin in the PA Mountains (among other places!). We took our pizza oven on vacation and did pizza nights for my wife's family in Michigan and mine in PA. Great at cooking for a crowd and keeping the hot cooking out of places with...
Ever have one of those weekends with maybe a little too much Q? Had a buddy and his wife staying with me this weekend. They love bbq, so when they stay it is the focal point of the menu...
Friday night was ribs, and of course I smoked way too many. Saturday for lunch was an all you can eat...
Bunch of leftover pulled pork so we made a couple pizzas today. BBQ sauce instead of pizza sauce, mozzarella, and plenty of PP. One with pickled onions, one without. With onions was the winner, but the dough on the one without was a better recipe.
Happy Sunday to all
EDIT: I should add, these...
My wife enjoys making pizza, so got her a pizza oven for Mother’s Day. First couple of pies here. Did a poolish dough yesterday - that is the way for sure.
They’re a lot of fun, and the oven cooks up a pizza in about a minute!
These are all my wife’s work.
Pepperoni
Carnitas pizza...
One of these days I’ll stop disappearing for months on end!
Got a couple shoulders on today for some pulled pork my son’s birthday party is next weekend, we are hosting a pool party with a few of his close friends and their families to celebrate.
We’ll be serving pulled pork sandwiches and...
One of the reasons I haven't been posting much the past year or so is that I've been neck (and sometimes eyeball!) deep in a very intense construction project here in Central FL. We're coming out the other side now and getting towards the end of our scope, so we're having a bit more time to...
Work schedule has been pretty brutal lately and haven't had much time to get proper smokes in, but have been able to get a good many cooks in on the griddle.
We had an old friend visiting town stop by for dinner last night. I made smash burgers. Served the kids at the bar and my wife and our...
Well I’ve taken the plunge. Ive enjoyed cooking in the Blackstone so much that more and more of our meals are moving outside. A few weeks ago I had a thought like “man,it would be great to have a bar and breakfast counter out here”. But no way I’m dropping $15k+ on an outdoor kitchen, and...
Threw some of these together for dinner last night and we liked them so much I did another round tonight.
Chicken thighs cut into small pieces, seasoned to taste (I used some fajita seasoning). Onto the griddle, then chopped into smaller pieces with the griddle scraper when mostly cooked...
Keeping up on using the new Blackstone this weekend. This time a diner breakfast of buttermilk pancakes, bacon, and eggs.
My wife made the batter from scratch. These really turned out good. Thanks for looking.
Rather than inundate you all with a bunch of posts I figured I’d roll everything from this weekend into one. Really enjoying the Blackstone so far, so much so that zero meals were cooked indoors this weekend. Everything turned out really good.
Friday night was smash burgers, which I already...
Continuing breaking in the blackstone and did smash burgers again tonight. These were a bit on the mega side, with each patty being about 1/4 lb - so 1/2 lb smash burgers. My pants have been a little loose anyway.
First time they were good but a little too greasy for my taste, so I focused on...
First cook on the new blackstone. Simple weeknight dinner and one I've been wanting to try: smash burgers. Bacon swiss with sauteed mushrooms, added lettuce and raw onion after the picture.
They had a great flavor, but too greasy for my taste. I think I was too worried about food sticking...
Had a rack of babybacks in the freezer unused from a larger meal I cooked a few months back. Decided to put them on today. Rode my bike to Publix this morning with my daughter (7) to pick up some stuff for sides, walked past the spice aisle. Normally make my own rubs but said screw it and...
Thinking about picking one of these up from Walmart. Anyone have one? Does the oven / air fryer work well?
Not worried about the griddle working well, I know that will work.
