Hey guys and gals. I got an Oklahoma joe reverse flow offset for father's day. I want to do a brisket hot and fast and was looking for pointers.
Does anyone have pointers on fire management to run that hot? I did some ribs today and seemed to have trouble getting enough airflow to keep clean...
Made some smoked chicken wings yesterday thanks to suggestions from others on this site a couple days ago. I was told to try Scarbelly Wings, with the sauce mixture injected into the wings.
I made two batches. One was the traditional Scarbelly wings, except I used the hot and spicy creole...
Anyone have a good marinade for chicken wings? Looking to smoke a couple trays for a party tomorrow. Never done the marinade before, usually just put a rub on them and throw some smoke. I usually smoke for awhile and then finish on the grill and then toss with sauce.
Interested to hear...
Hello all,
Been awhile since I've posted, but I'm planning to smoke a couple pork butts for pulled pork this weekend. I was thinking about injecting them with apple juice to try something different.
Has anyone injected pork butts before? I usually just rub them and throw them on, but just...
Hello all,
I've got a WSM 18 and am interested in making some modifications. One of the things I'm thinking about is making a cart with casters for it. I've seen a video on YouTube of how to make one for a 22, but was just curious if anyone has done one themselves. If so, would there be any...
Hey guys, I was hoping to get a deer by now to make summer sausage with, but have had no such luck. I was planning on buying some meat this week to make summer sausage this weekend. Brisket is usually about the cheapest beef I can find, and was thinking about doing that mixed with some pork...
Hey guys,
Its been awhile since I've been on here. My smoking habits have taken a back seat since my wife had our baby boy this spring. However, we're having a football party Saturday, and I'm making pulled pork. I've made pp plenty of times, but was thinking about changing it up this time...
Hey guys, I'm looking for a suggestion on a quality grill without having to dish out an arm and a leg. I know the weber name had good products, but I'm trying to see if I can find any other suggestions that might be less expensive. The grill I have only last me two years, and I kept it covered...
Had a family get together this weekend for my wife's side of the family. I put the pork butt in the wsm on Friday night, and let it ride until I got up Saturday morning. I pulled everything and served Saturday afternoon. There was a lot of leftovers, so today I made pulled pork nachos for...
I tried using my amnps in my wsm last night while smoking a pork butt, and it didn't work. I'm not sure if the mailbox mod is required for use in the wsm. Does anyone else use their amnps in a wsm?
If so, what does that mod look like on the wsm? I've already put a mailbox on my big smokehouse.
I was hanging out with a buddy yesterday and was talking about wanting to smoke some fish. He goes to the freezer and pulls out a pack of frozen salmon that he has had for awhile and hasn't already ate.
Just so happens we are going to have a sausage making day next Saturday, and I thought this...
Man, after 4 days straight of smoking meat, going back to work today was brutal. The addiction is real. So real I was thinking how I could streamline my sausage making process.
The local grocery has pork butts on sale for $1.19/lb. I decided to pick up 2 on the way home. I plan to grind...
Well, this weekend has been a smoking marathon for this guy. Friday morning-smoked cheese. Friday afternoon-smoked snack sticks. Saturday-Stuffed Kielbasa for New Years. Sunday- Smoked Kielbasa and Summer Sausage...... and for today. .... Smoked Chicken Wings.
I fired up the WSM for a quick...
I've been making all kinds of stuff this weekend. Started with snack sticks. Also made summer sausage today. Made kielbasa today for lunch. Was very happy with how it turned out.
Also got to use my smokehouse with my mailbox mod that I installed yesterday.
I made some cheese earlier this fall and found that pepper jack was my favorite. This time around I made mostly pepper jack, and a couple blocks of cheddar, muenster, and Colby jack. I also bought a ghost pepper jack to try something different.
I smoked using alder pellets in my new AMNPS...
I've done several whole chickens in the past, and usually just do BBQ chicken smoked with Hickory. I decided I wanted to try something different, so I decided to use a creole butter marinade that I used with a turkey a couple weeks ago.
I started this morning by spatchcocking the chicken...
Hey guys, I have smoked chicken plenty of times before, and I usually just use hickory because that is one of my favorites for pork, and I always have some on hand. I'm going a different route tonight, and thought I would ask for input from anyone that does a lot of chicken.
I made a turkey...
This is a family favorite, especially my dad. He puts it on brats, pork chops, sandwiches, etc. Or my favorite, as a dipping sauce with pretzels while drinking beer. Every time I go home he asks me to bring mustard, so I decided to make him a big batch for Christmas.
Recipe:
14 Oz yellow...
I went to get some casings for summer sausage today and they had the clear casings, and also the usually brown casings that you usually see.
The only difference I could see was the price, and the clear ones were cheaper. Could anyone tell me what the difference is, or if one is better...
