Question for you... After your 9.5 hour cook (7 in smoker and 2.5 in oven) did you let it rest, or did you shred right away?
I am looking to smoke a Chuck this weekend to put into some Arepas and just want to make sure I get the timing right and get it to shred without...
Thank you for sharing!!!
I am thinking of making some Arepas for the upcoming Independence Day Weekend. I was thinking of what would be a good beef to shred that is not Brisket (can't afford the current prices), and thought of Chuck Roast.
Just so I get the timeframe right of what you did, you...
Thanks Al!
Yea, Lamb is pretty pricy, but I wanted to experiment and learn more about smoking different meats.
I typically eat my red meat medium, but was a bit nervous cooking this as it was my first time, so I errored on the side of caution.

Morgan
Way back in 2019 when we could gatehr in large numbers at Back Yard Barbecues, a friend of mine smoked a Leg of Lamb and it was delicious and recently my Wife and I saw some nice selection of Lamb Legs at our local Wegmans (local grocery chain) and we decided to pick one up.
Doing some research...
Greetings everyone,
On Sunday, the lady and I decided to smoke something spur of the moment while we were out getting a couple items for dinner. We were in Aldi, and their cuts of meat change periodically, and I decided to see what they had.
They had a pre-marinated Chuck Roast that was...
As i have never done Baby Back Ribs, I have no wheel to reference and this is the first 'good' recipe/process i found in the huge vault of the forums.
Thank you for posting and I will be trying this tomorrow! :)

Great pics! I am trying my hand at Baby Back Ribs this Sunday, and have them ready to prep, but I am looking for a good 'prep article' and have been scouring the Forums, with no luck... Any suggestions?

First night I used the shredded Brisket in some Tacos, and they were amazing!
I will be experimenting with a few things this week to try the Brisket with, any suggestions are more than welcome! ;)
Cheers,
Morgan.
Greetings SMF,
This weekend I decided to try my hand at smoking a Brisket for the first time. I read a few forum posts on temps, process, etc. to prepare myself, and here is how I proceeded:
Prepping the Brisket:
I purchased a 6 lb Brisket (wanted to go small for my first one) from a local...

Thanks Danny & Joe!
I actually got a call back from OK Joe (CharBroil) customer service yesterday.
They said that direct flames or coals against the side will cause the paint to bubble and peel like it did.
This makes sense, as during the third hour I got a fairly big fire burning in the Fire...

I finished the assembly Sunday evening and didn't have time to 'Season' it (break it in), so I waited for this last weekend.
I had time on Sunday and...
