I'm trying again to post pictures of last weekends smoke which was really good. I did 6 slabs of spare ribs that I trimmed down ST. Louis style and used Jeff's rub. Some salmon with lemon pepper(I was'nt real sure what to put on the salmon),chicken thighs that I used Ole Bobs maple sugar rub...

My bad on that. I forgot to put the second parentheses after the pot of beans. Sorry. It was only in the beans ,and it is a one pound roll of Jimmy Dean Sausage smoked on the smoker and crumbled up in the beans. It turned out good.

I had the same problem a couple of times when I first started smoking
meat. I had gotten some hickory that was green(WHICH i DID NOT KNOW) and I loaded my fire box with way too much of it. The wood just
kind of smoldered , and I had thick , almost grey smoke, and the meat
came out way too...

I tried the tri tip this past weekend on my little ECB smoker and it was excellent! I have a friend who is a butcher at kroger and he showed me where the tri tip is on the sirloin, and cut 2 for me off of choice grade
sirloins. I cooked them like Chris did on his first try, at about 275 degrees...
