    Smoked a batch of meatballs today. 50/50 beef pork mixture with oregano, basil and onion powder seasoning. Smoked for 3 hrs at 255F.Still very tender and quite tasty. Makes about 2 meals. Heated up pasta sauce we made last summer. Serve on Kaiser roll with mozzarella cheese!

    Smoked a pork roast for 8 hours at 275 using maple. Had to go on time as remote thermometer started misbehaving early on. Worked! Tasty and pull able. Put on cheddar cheese and slice of tomato. All in a cheese bun. That's good eating!

    Whatever you do or don't do, DO NOT power wash it. I messed up two units that way as water got into the electronic controls.
