Has anyone done an over night hold on spare ribs. Like 12+ hours? I am cooking brisket and pork butt on Friday for a cookout Saturday. I was thinking I might cook the spares then too.
Hello friends!
My neighbor was letting me use his Traeger smoker to cook a brisket overnight. He helped me set it up, gave me pointers and was leaving town for the night. Unfortunately his wisdom is inaccessible to me at the moment.
The temp was set to 225 and the brisket was placed in at...
...the upper grate cardboard.
I am pulling the point and wrapping it in peach butcher paper in 15 minutes. (No more using aluminum foil). The Brisket Chronicles explained why. Using foil steam tenderizes the brisket and makes a pot roast-like consistency. The butcher paper breathes better and...
I never cook store bought ground rare anything, if I grind something I am not worried about it, I like to grind brisket and make patty's then freeze, cook from frozen works well. You can also cook steaks from frozen which is great for somebody who loves rare, wife see's pink she's done lol...
Smoking a rack of BB ribs in the MAK, and filled up the empty space on the rack with some bacon, and a brisket trim burger. The burger made for an awesome lunch topped with cheddar, bacon, avocado, and pickled jalapeños. Wife opted for a BLT, for which the double smoked bacon was perfect. Ribs...
12 Hr hold:
No food should be held that long !?
It sat too long !
Its unsafe food service !
I hope you did not get sick from food poisoning.
Sorry for the Rant?
But not Food service Safe !
Wish we saw those kind of prices here in Finland, brisket is not a domestic cut so what we get is imported. Right now only option i have locally is frozen/thawed Black Angus from Australia at 12 USD per LB out the door. Silver lining is that i don't have to worry about questionable safety...
Great price and I love ground brisket
I don't freeze my grinder parts. The meat tends to stick.
I usually just chill well in garage fridge that is struggling in our recent heat and humidity wave.
Jeffs is good BBQ sauce.
If you like spicy BBQ sauce get some Meat Mitch Stay Hot, it my fav. Or Kosomo's Honey Jalapeno.
I sometime braise brisket in beef broth, that sauce is money!
Man, I wish we could get a sale on anything beef.
96% ground Kroger beef is on sale at $9.99 right now. Insanity. I havent been to Costco in a couple weeks to scope the brisket price. Last one I bought was $6 and change per pound.
Thank you, thank you. I'm working up a plan for an easy dinner with it tonight. Not settled but I have some brisket queso left over from the other day that will fit in there somewhere.
In Franklin's book he talks of his favorite being beef ribs with Franks hot sauce and he is not kidding! Works equally well on brisket. I'd get a bottle of Blues Hog and a bottle of Franks.
