Overhandling. Never should have drained the juices and re-wrapped. Keep it in the butcher paper with the juices when resting down. In fact, when I hold mine in the kitchen oven instead of my steam holding cabinet I get a foil pan filled 1/2 way with water, put a grate over that, then the wrapped brisket on top.
Hanna, I hate to say this, but...the simpler the process the better. your process had many steps along the way. I strongly believe that the simpler the better always works out better. I would reconsider how much handling is involved. When I do a FP i rub it the niht before, smoke it at 275 till probe tender, wrap and rest and done.

Same for any recipe, if there are 20 ingredients and as many steps, its not gonna be good.
 
The hold is truly one of the most important if not the most important part of the cook. Leave the brisket be in the paper you cooked it in, keep the oven temp as low as you can, and keep a water pan in the oven as it rests. I let mine rest as long as I can as it continues rendering and re-absorbs it's juices in this part of the process, which is the key component to whether you're going to unwrap a juicy or a dry brisket.

Always comes out juicy.

Well now I'm at a complete loss.

I wrapped it in butcher paper and put it in the brisket blanket and placed it in the Que Crib. The IT was 165° F.

I pulled it from the QueCrib at 12 hrs and 23 minutes. When I removed it from the brisket blanket it was stone cold. How?? 😭😔

What in the hell???? 😡

It's cold. The fat area is jiggly, but the meat is firm and tough. It has moisture. But it's not pulling apart.

No, I just couldn't sleep..again!!!
I started mine at 4:00 PM this afternoon, knowing all well that I'll be awake until at least 3-4:00 AM Monday, then I'll sleep for a few hour, and bring over to my folk's around 2-3:00 after a long cooler hold, at least that's the plan. LOL!!!
