As I continue to work my way to the bottom of the chest freezer, next up is the tenderloin from our cow. Sous vide for two hours at 129 degrees F, ice bath for the bag, then smoke for an hour before searing off to serve.
I'm going to prepare a beeftenderloin along with a spiral slice ham and cornish game hens. For the beeftenderloin, should I grill or smoke it? Either way, I want it to end up medium rare. My guess is smoking will take longer. I've never had smoked beeftenderloin. Which tastes better?
It was incredibly tasty! I got so caught up in enjoying it that I forgot to take pictures until I went back for seconds. My favorite way to eat it was on a Hawaiian roll, either dipped into a demi glaze or simply enjoyed on its own.

It can be done, with a few caveats.
Fat goes rancid rapidly in dehydrated foods, as the moisture does not evaporate out of it well. Its why foods like avocados aren't recommended for dehydrating.
